The Bread Baker's Pocket Companion written by Andrew Jangigian is a portable reference guide for bread bakers and recipe developers. Much of the information it contains is derived from items published on Wordloaf (https://newsletter.wordloaf.org) the author's bread-centric email newsletter. This handy 7" by 5" book contains conversions for temperature, ingredients, and flour protein content. Also included: the protein content of common flours, desired dough temperatures, baker's math, information on sourdough started care and feeding, information on folding dough, pre-shaping and shaping loaves, scoring loaves and a nice glossary at the end.
